Cauliflower for Mashed Potatoes

When cutting carbohydrates, it doesn’t mean that your meals have to taste bland and disgusting! Take for example, using cauliflower as a substitute for your classic mashed potatoes.

All you have to do is steam a bowl of cauliflower, spread or spray imitation butter on it, add a bit of non-fat half and half (or plain milk) and send it to puree in the blender ! (Add salt and pepper to taste)

And if you want more flavor, you could always add low-fat cheese, sour cream, and some roasted garlic!
