Japanese Pickled Cucumbers


  • 1 English Cucumber
  • 1/4 cup  Sugar
  • 1 cup Vinegar
  • 2 tsp Sesame Oil (I prefer Black Sesame Oil)
  • 1 tsp Ground Black Pepper


  1. Thinly slice cucumber (skinned or not by personal preference) and place into a container.
  2. Mix sugar, vinegar, sesame oil, and ground pepper in a separate bowl.
  3. Pour over cucumbers, be sure all cucumbers are soaked.
  4. Refrigerate in a sealed container for at least 3 hours.
